A new café is making waves in Frankston, with 22-year-old owner Josh Taylor opening Project One just five weeks ago. Despite his age, Josh has already built a loyal following, with customers praising both the atmosphere and the coffee.
A Passion for Coffee and People
Josh admits that launching a café at 22 might seem ambitious, but says his passion drives him.
“I just love it and have a passion for it. If you didn’t love the job and the work, it would be awful. Every step of the journey is something I’m looking forward to. I’ve got a huge passion for coffee and for people, and I love the challenges that come along with it,” he said.
While he never saw himself as a business owner growing up, the idea of opening his own café “sparked a few years ago.”

Choosing Frankston
Josh said staying local was an easy choice.
“I know so many people and businesses in the area. I wanted to see the faces I see on weekends at gyms, run clubs and other community spots, and give them somewhere to come,” he explained.
Frankston’s growth was also a factor.
“It’s such a growing area, but it doesn’t have enough coffee shops. Even now there’s room for more specialty coffee,” he said.
Backing from Family, Council and Community
Josh credits his father as being vital to getting the café off the ground.
“At first I thought I could do it all myself, but I quickly realised I didn’t know what I was doing. Dad’s a business owner himself and walked me through the process. He was here every day helping build and set up. Without him, we wouldn’t be open,” Josh said.
He also praised the wider community, including Frankston City Council, for their role in supporting the launch.
“The council were so helpful in actually helping me find the spot and giving me tips and tricks to get started. Local businesses nearby have also been grateful there’s another coffee shop close to their offices. We’ve had only amazing reviews and great customers so far,” he said.
Patron Hayley, who was working on her laptop during a visit, said she first heard about Project One through a friend.
“They raved about the coffee, so I had to come and check it out,” she said.

Cr Nathan Butler, who represents Yamala Ward, Frankston City Council, said Project One is a welcome addition to the city.
“It is so good seeing a young Frankston local like Josh take the leap and open Project One Coffee. Places like this bring energy and life to our city and help other small businesses around them thrive. Council wants to see more young people follow their ideas and we are here to help make that possible.”

First Impressions
Project One immediately strikes visitors with its modern décor, large space, upbeat music and lively atmosphere. On any given day, the café is filled with patrons enjoying the vibes, workers grabbing lunch and business owners enjoying meetings. Smiles and happy faces are in no short supply.
Opening Hours
Project One is open Monday to Friday, 6.30am–3pm, and Saturdays 6.30am–2pm. Sunday trading is planned for next year once the business is more established.
